I remember the first time I tried a biscoff biscuit, it was at a cafe when I got it served with my coffee since then I have loved this combo. That memory inspired this pastry flavour and it was absolutely delicious.

Here are the ingredients you will need:

  • Ready rolled puff pastry
  • 1 tbsp cream cheese
  • 1 tbsp biscoff

For the Coffee glaze:

  • 1 tsp sugar free syrup
  • 1/2 tsp espresso powder
  • 1 tbsp milk

Method:

  1. Using a cookie cutter cut circles of around 5cm wide. Mix the cream cheese and biscoff and add to the centre of the pastry circle
  2. Cut thin strips of pastry and arrange them on top of the base (as per the video)
  3. Mix the glaze ingredients and brush the pastries with it. Bake at 200c for 12-15 minutes until fully cooked. Enjoy!
