I remember the first time I tried a biscoff biscuit, it was at a cafe when I got it served with my coffee since then I have loved this combo. That memory inspired this pastry flavour and it was absolutely delicious.
Here are the ingredients you will need:
- Ready rolled puff pastry
- 1 tbsp cream cheese
- 1 tbsp biscoff
For the Coffee glaze:
- 1 tsp sugar free syrup
- 1/2 tsp espresso powder
- 1 tbsp milk
Method:
- Using a cookie cutter cut circles of around 5cm wide. Mix the cream cheese and biscoff and add to the centre of the pastry circle
- Cut thin strips of pastry and arrange them on top of the base (as per the video)
- Mix the glaze ingredients and brush the pastries with it. Bake at 200c for 12-15 minutes until fully cooked. Enjoy!
