When I think about a breakfast that will get me out of bed very quickly I always think about croissants. There is something about flakey pastry which I just love, pair them with St Dalfour Blueberry Spread for the ultimate sweet breakfast treat.

Using ready rolled puff pastry makes these so easy to make, add sone mozzarella cheese for that all important cheese melt! These will keep fresh for a couple of days but best to enjoy them warm.

Here are the ingredients you will need:

  • 1 sheet of ready rolled puff pastry
  • Around 3 tbsp St Dalfour blueberry spread
  • Mozzarella cheese (sliced or grated)

Egg wash and chopped pistachios to top

Method:

  1. Spread the blueberry jam over one side of the puff pastry
  2. Add the cheese over one end of the pastry and fold over
  3. Cut into long triangular shapes to form around 8 croissants, make a small cut in the longer end and roll (see video for technique)
  4. Put the croissants on a baking tray, add the egg wash and top with some chopped pistachios
  5. Bake at 200c for around 15 minutes, if using fresh mozzarella the cooking will take longer as the cheese has more liquid in. Enjoy them!
