These vegetarian sausage rolls are made with blitzed veggie sausages, a spoonful of spicy chimichurri and plenty of melted cheese, all wrapped in puff pastry and baked until golden. They take 15 minutes to put together, plus a quick chill, and you can make 6 big ones or cut them smaller for mini sausage rolls.
What I use
KitchenAid K400 blender: The blender I use for all my blitzing.
Ninja chopper: Makes quick work of the chopping.Pastry brush: For brushing it on evenly.

By now you know how much I love pastries, and although I’d usually go for a sweet one, sausage rolls have a special place in my heart. I had my first one when I moved to the UK and I loved them from day one. These veggie sausage rolls are my Latin twist on the British sausage rolls I fell for, with chimichurri bringing garlic, herbs and a little heat.
- Just 6 ingredients
- Vegetarian, and easy to make vegan
- Freeze them before baking

How to make puff pastry sausage rolls
Vegetarian sausages blitzed in a chopper give you that proper sausage roll texture, and any veggie sausage you like works. Chilli chimichurri is the star, shop bought or homemade. Cheese melts through the filling and holds it all together. A ready rolled sheet is the easiest puff pastry for sausage rolls, and most supermarket ones are made with vegetable fat. Egg wash and sesame seeds give you the golden, crunchy top.
A note from your nutrition coach
Shape the filling into a tight log in cling film and chill it for 30 minutes before it goes on the pastry. It firms up, so it’s easy to roll, and the pastry bakes crisp instead of going soggy underneath. That’s the difference between homemade sausage rolls that hold their shape and ones that slump. These are a treat rather than an everyday lunch, so enjoy one warm with a big salad.

- Chill the filling log for 30 minutes so it's easy to roll and the pastry stays crisp.
- Check your cheese is vegetarian, as some hard cheeses are made with animal rennet.
- Most ready rolled puff pastry is made with vegetable fat, check the label if you're making them vegan.
- For mini sausage rolls, cut into 12 and bake for 18 to 20 minutes.

- If you're after easy sausage rolls recipes for a party, this one only needs 6 ingredients.
- Home made sausage rolls are easiest with a ready rolled sheet, and sausage rolls with puff pastry like these freeze really well before baking.
- I originally called these chimichurri sausage rolls, and the chimichurri is what makes them, so don't skip it.
