This blueberry baked yogurt soufflé is a creamy, high protein Greek yogurt bake that cooks in the air fryer in 15 minutes. Each dish has around 27g protein, 11g fibre and 286 calories, and it works as a baked yogurt breakfast or a healthy Greek yogurt dessert.

It is no secret that I love a sweet breakfast, and there was a time (before my egg era) when I would always have sweet breakfasts. This is a tweaked version of the Greek Yogurt and Blueberry Soufflé from the Yazio Pro recipe library, which is creamy, soft and so tasty. It is also high protein and lower in sugar, and you can meal prep it in pots so they are ready for you every morning.

What you get with this baked Greek yogurt:

  • A blueberry Greek yogurt recipe that tastes like baked cheesecake, with 27g protein a dish
  • A blueberry yogurt bake that makes two portions in 20 minutes, straight into the air fryer with no preheating
  • A healthy high protein dessert or breakfast that keeps in the fridge for 3 days

Key Ingredients for Baked Greek Yogurt

Fat free Greek yogurt is the base and most of the protein, around 17g per dish, which is why this counts as a Greek yogurt high protein recipe. Full fat works too, it just adds calories.

Egg is what sets the mixture so it bakes into a soft, sliceable custard rather than warm yogurt. One medium egg per dish is all you need.

Instant custard powder replaces the pudding mix in the original, which I could not find anywhere in the UK. I use a no added sugar, supermarket own brand one, the kind you would normally just add water to.

Chicory syrup sweetens it gently and brings almost all of the fibre, about 10g per tablespoon. Honey or maple syrup work if that is what you have, but the fibre drops right down.

Blueberries burst as they bake and colour the custard in little purple pools. Fresh or frozen both work, frozen just need an extra minute or two.

My air fryer version

This one started life in the Yazio Pro recipe library as a Greek Yogurt and Blueberry Soufflé, and I made a few changes to make it work for me here in the UK:

  • Custard powder instead of pudding mix, because I could not find the pudding mix anywhere in the UK, and supermarket own brand works perfectly
  • Chicory syrup instead of sweetener, for a gentle sweetness and around 10g fibre a dish
  • More blueberries, because there is no such thing as too many
  • The air fryer instead of the oven, so it is ready in about 20 minutes rather than 65 (the original oven method is in the recipe card if you would rather bake it)

So is it really a yogurt soufflé? Not in the classic French sense, there is no whipping of egg whites. It puffs up in the heat, then settles into something closer to a baked yogurt cheesecake as it cools, which is exactly why I love it.

Why I Actually Stick With Yazio Pro

I have tried a lot of tracking apps over the years and most of them lasted about a week. Yazio Pro is the one I have kept, and the reason is simple: it helps me stay mindful about what I am eating without turning food into homework.

Track it however suits you that day

Some days I want every gram logged, other days I just want a rough idea. Yazio Pro lets you do either, so you can pick whatever fits your day:

  • Voice or text: just say or type what you had, “one blueberry Greek yogurt bake”, and the Voice Tracker logs it in seconds
  • Camera: snap your plate and let the AI do the work
  • Barcode: scan the packet for anything shop bought
  • Search: look it up yourself if you like to be precise

The little things that keep me going

  • Streak milestones that actually get celebrated, which is more motivating than I would like to admit (I am on 132 days)
  • Meal tips and recommendations, handy when I am stuck for ideas
  • A water tracker with a drink water reminder, because I forget every single day
  • A huge recipe library, which is exactly where this bake started life

Is Baked Yogurt Healthy? The Nutrition

Each dish works out at around 286 calories, 26.9g protein, 23.3g carbs, 6.9g fat and 11.5g fibre. Most of the 16.5g sugar comes naturally from the milk, yogurt and blueberries. That puts it firmly in high protein low calorie desserts territory, and it is a lot more filling than a pot of yogurt on its own. These are estimates based on the products I used, so your numbers will shift a little with different brands.

A Note From Your Nutrition Coach

My best tip is the one I almost did not include because it is not in the timings: once they are cooked, leave them to chill in the fridge for about an hour. Warm, this is a soft yogurt bake. Chilled, it firms up into something that eats like a slice of baked cheesecake, which is a much easier way to get 27g protein into your morning than forcing down a shake. Pairing protein with fibre like this can help you feel full for longer, so it is a breakfast that actually lasts until lunch.

If you love this, try my Blueberry Yoghurt Cake, browse more high protein recipes, or have a look at the glass containers I use in my kitchen gift guide.

Instructions

Air fryer method

  1. Crack an egg into each 15 x 10.5cm ovenproof glass dish, add the milk and whisk with a fork until fully combined.
  2. Add the Greek yogurt and chicory syrup to each dish and whisk until smooth.
  3. Sprinkle the custard powder over the top a little at a time, whisking as you go, until there are no lumps. Taste and add a little more chicory syrup if needed.
  4. Add the blueberries, either stirred in or dropped over the top, keeping a few back to serve.
  5. Wipe any drips from the rims with kitchen paper so they do not burn.
  6. Put both dishes in the air fryer, no need to preheat, and air fry at 160C for 15 minutes. The edges should be set and the centres should have a slight wobble.
  7. Leave them in the switched off air fryer for a few minutes, then take them out. They will sink a little and firm up as they cool, which is normal.
  8. Serve warm, or chill in the fridge for about an hour for a firmer, cheesecake like texture, topped with the remaining blueberries.

Oven method (the original app version)

  1. Mix everything the same way, then pour it all into one ovenproof dish of about 21 x 15cm and bake at 160C for about 60 minutes, until the edges are set and the centre has a slight wobble. Cool before serving.

Note

  • Use a fork rather than a spoon to whisk, it breaks up the egg and any custard powder lumps much faster.
  • Air fryers vary a lot, so check them a few minutes early the first time you make this air fryer yogurt bake.
  • For a baked yogurt cheesecake texture, chill for about an hour before eating. It is lovely cold.
  • Leftovers keep covered in the fridge for up to 3 days, which makes this an easy meal prep breakfast.
  • I use 15 x 10.5cm Pyrex glass containers, the same ones in my kitchen gift guide. Any small ovenproof dish that fits your air fryer works.
  • Gluten free by ingredients. The custard powder I use contains no gluten ingredients but is not certified, so check your label if you are coeliac.
  • Contains egg and milk. Suitable for vegetarians.
  • Nutrition is an estimate per dish, based on 35g blueberries, no added sugar instant custard powder and Vilgain chicory syrup.

What is baked yogurt?

Baked yogurt is Greek yogurt mixed with egg and a little sweetener, then baked until it sets into a soft custard. This baked yogurt recipe adds custard powder and blueberries, and it cooks in the air fryer in 15 minutes.

Is this really a soufflé?

Not in the classic sense, as there are no whipped egg whites. The Yazio Pro app calls it a Greek yogurt soufflé because it puffs up as it bakes, but it settles into a creamy yogurt bake as it cools.

Can you bake Greek yogurt?

Yes. Greek yogurt bakes beautifully when you mix it with egg, which sets it. On its own it would just turn runny and split, so the egg is not optional here.

Is Greek yogurt high in protein?

Yes, fat free Greek yogurt has around 10g protein per 100g, which is why this baked Greek yogurt has about 27g protein a dish. That makes it one of my favourite Greek yogurt breakfast recipes.

Can I make this baked Greek yogurt recipe in the oven?

Yes, that is how the original Yazio Pro version is made. Pour the whole mixture into one dish of about 21 x 15cm and bake at 160C for about 60 minutes.

Can I use frozen blueberries?

Yes. Add them straight from frozen and give the bake an extra minute or two. They will bleed a little more colour into the custard, which looks lovely.

Can I meal prep baked yogurt?

Yes, it is ideal for meal prep. Cook a batch, cover and keep in the fridge for up to 3 days, then eat it cold or warm it briefly in the microwave.

Is this a healthy high protein dessert?

It is a lighter, healthy Greek yogurt dessert at around 286 calories with 27g protein and 11g fibre a dish. It is my go to Greek yogurt dessert recipe, and it also works for breakfast, which is how I usually have it.
