I came up with this idea one day when I had some left over filo pastry and some very ripe bananas, the addition of peanut butter just gives these that sweet and savoury mix which I really like.

The filo goes super flaky if you add some melted butter or oil, I also like to add some sesame seeds to top. If you want to go a step further why not drizzle them with some melted chocolate!

Here are the ingredients you will need:

  • 1 banana
  • 2 Phyllo pastry sheets
  • 1 tbsp Peanut butter
  • Cooking spray

Method:

  1. Spray some cooking oil over a filo sheet and make sure to brush all over
  2. Peel and chop your banana in 3
  3. Spread some peanut butter over the short end of the filo, add the banana and roll tightly
  4. Close the ends, spray some more oil and top with sesame seeds
  5. Air fry at 170c for 16 minutes, let cool slightly and enjoy!

These banana and peanut butter filo pastries are a delicious mix of sweet and savory. The filo turns super flaky with a brush of melted butter or oil, and a sprinkle of sesame seeds adds extra texture. For an extra indulgent touch, drizzle with melted chocolate. Perfect for a quick snack or dessert!
