These ham and cheese egg bites are one of those recipes that quietly become a staple without you even realising it. They started as part of my “100 ways to have eggs” series and ended up being one of the most saved and repeated recipes on my blog, and honestly, I get why.

From a nutrition coaching point of view, they tick so many boxes: high in protein, quick to prepare, easy to portion, and endlessly customisable. Whether you’re working on hitting your protein goals, need something portable for busy mornings, or just want a reliable savoury snack, these are a solid choice. They work just as well as ham and cheese breakfast cups, egg muffins with ham, or even a base for bacon and cheese egg bites if you want to switch things up.

Ingredients

  • Low-calorie spray – for greasing the muffin tin. Helps prevent sticking.
  • 6 medium eggs (approx. 300 g / 10.5 oz) – the main protein source, rich in vitamins and minerals.
  • 2 slices of ham (about 60 g / 2 oz), chopped – adds savoury flavour and extra protein.
  • 40–50 g (1.5–2 oz) cheese – use as much as you like, but this amount provides balance without overpowering. Cheese adds creaminess, calcium, and extra protein.
  • Seasoning to taste (pinch of salt, ½ tsp black pepper, herbs as desired) – enhances flavour and allows you to tailor the Cheesy Ham Egg Bites to your preference.

Method

Step 1: Prepare the Muffin Tin
Preheat the oven to 180°C (350°F). Lightly grease six cups of a muffin tin with low-calorie spray to prevent sticking.

Step 2: Add the Cheese
Sprinkle grated cheese into the base of each muffin cup. This creates a gooey base that complements the eggs and ham.

Step 3: Crack the Eggs
Crack one egg into each muffin cup on top of the cheese. You may break the yolk for a scrambled texture or leave it whole for a baked-egg feel.

Step 4: Add the Ham and Seasoning
Scatter the chopped ham evenly over the eggs, then season with salt, pepper, and any herbs of your choice.

Step 5: Bake
Place the tin in the preheated oven and bake for around 15 minutes. Adjust cooking time for softer or firmer yolks.

Step 6: Serve
Allow to cool slightly before removing from the tin. Serve warm or refrigerate for later use.
