This microwave keto bread with chia seeds is a soft, low carb bread you make in the microwave in about 3 minutes, no oven needed. It uses almond flour, chia, one egg and Greek yogurt, and each slice has under 3g net carbs, so you can have proper toast or a toastie on a keto or gluten free diet.
Finding a low carb bread that actually tastes good and is easy to make is so rare that I have to give it a shout out! This recipe came from the Yazio Pro app with a couple of tweaks but the same idea. So easy to make, you do not even need an oven, just a microwave and 5 minutes later you can make the most delicious toast or sandwich. I served mine with some cheese and roast turkey slices and it was a delicious filling lunch.

Key Ingredients for Microwave Keto Bread
Almond flour is the base of almost every almond flour keto bread, and what keeps this low carb. Ground almonds work exactly the same, which is what makes this an almond flour microwave bread rather than a wheat one.
Chia seeds soak up the liquid and hold the crumb together, a bit like an egg would. Grind them first if you can for a softer, more bread like texture, or leave them whole for a denser, speckled chia seed bread.
Egg is the only binder, one large egg (about 70g) does the job for the whole loaf.
Reduced fat butter and Greek yogurt keep it soft and stop it tasting eggy. The yogurt replaces the sour cream in the original, so it is something I always have in the fridge anyway.
Baking powder and apple cider vinegar react together to give it a lift in the microwave. Use a gluten free baking powder, as some contain wheat.
From the Yazio Pro App to My Microwave
This one started life in the Yazio Pro recipe library as Microwave Toast, and I kept the same idea with a few changes:
- Chia seeds instead of ground flaxseed, because chia is what I always have in the cupboard
- Greek yogurt instead of sour cream
- No sweetener, just a pinch of salt and some oregano, as I wanted it savoury
- A splash of water so the chia has something to soak up
- Reduced fat butter, and two bigger slices instead of four small ones, which feels much more like a regular slice of bread

Is it really 90 second keto bread? Not quite, it takes 2 to 3 minutes in my 800W microwave. It is the same idea as the 90 second bread recipes you see everywhere, just a little bigger. You will also see it called keto mug bread, as you can make it in a large mug too, I just prefer a small glass dish for proper square slices.

Is Microwave Keto Bread Healthy? The Nutrition
Each slice (half the loaf) works out at around 349 calories, 13.4g protein, 2.9g net carbs, 30.8g fat and 5.3g fibre, before any filling. Most of that is fat from the almond flour and butter, which is what keeps an easy keto bread recipe like this filling, and why a microwave almond flour bread is so much more satisfying than a slice of regular toast. If you want it lighter, have one slice open faced rather than both as a sandwich. These are estimates based on the products I used.
A Note From Your Nutrition Coach
If you only take one tip from this post, grind the chia seeds. Whole chia works, but ground chia gives a much softer, more bread like crumb that actually toasts like a slice of bread rather than a seedy cake. The other trick with any microwave bread is not to overcook it, take it out as soon as it comes away from the sides or it turns rubbery. And let the batter sit for a minute before it goes in the microwave so the chia can soak up some of the liquid. Breads like this are not low in calories, so I think of a slice as part of the meal rather than a side, and fill it with protein like turkey, eggs or cottage cheese to make it a proper lunch.

Makes 1 loaf (2 slices)

In a bowl, whisk the egg with the melted butter, apple cider vinegar and Greek yogurt until smooth.

Add the almond flour and chia seeds. If you can, grind the chia first in a spice grinder for a softer, more bread like crumb.

Add the baking powder and salt and mix until everything comes together.

Stir in the water and oregano until you have a thick, even batter. Let it sit for 1 minute so the chia can soak up some of the liquid. If it looks very stiff, add another teaspoon of water.

Spoon into a large mug or a small microwave safe glass dish (mine is 15 x 10.5cm) and smooth the top, leaving room for it to rise.

Microwave at 800W for 2 to 3 minutes. It is done when it comes away easily from the sides.

Let it cool for a minute, turn it out and slice it in half horizontally to make 2 slices.

Toast until golden in a toaster or a dry pan, or fill it and toast it in a pan to make a toastie.

Note
- Grinding the chia makes the biggest difference to the texture. Whole chia works, just expect a denser, speckled crumb.
- Microwaves vary, so start with 2 minutes and add 30 seconds at a time. At 1000W or more it may only need around 90 seconds.
- Serving suggestion: I filled mine with cheese and roast turkey slices and toasted it in a pan. The filling is not included in the nutrition.
- Use a gluten free baking powder, as some baking powders contain wheat.
- Swap the chia for ground flaxseed to make the original Yazio Pro version.
