This protein pumpkin smoothie is 31g of protein and under 300 calories, thick enough to want a spoon, and it takes five minutes and one blender. Real pumpkin puree, vanilla protein powder, Greek yoghurt and a frozen banana, with a no banana version further down if you would rather skip it.

I had not made a smoothie in ages, and it was worth the wait for this to be the one back. The consistency is exactly right, thick and refreshing at the same time, and it tastes like pumpkin pie rather than like something you are being sensible about. Most pumpkin smoothies are a banana smoothie in a costume, three grams of protein and a lot of sugar, and this is not that.

If you have half a tin of pumpkin puree sitting in the fridge, this is what to do with it. A smoothie with pumpkin puree in it is the fastest way I know to finish the tin, and it beats queuing for pumpkin spice smoothies somewhere.

What goes into this protein pumpkin smoothie

Pumpkin puree is the whole point, and it has to be plain puree rather than pie filling, which is already sweetened and spiced. Freeze it in an ice cube tray and you get a thick frozen pumpkin smoothie without watering anything down.

Vanilla protein powder does the heavy lifting, one 35g scoop for 24g of the protein. Vanilla suits the spice better than anything else, and unflavoured works if you add the maple syrup.

A small frozen banana is what makes it creamy rather than icy. This is a pumpkin banana smoothie as written, and the FAQs cover what to use instead.

Greek yoghurt, just two tablespoons, for thickness and a little tang against the sweetness.

Pumpkin spice, or cinnamon, ginger and a pinch of nutmeg if you are making your own. A pumpkin pie spice smoothie and a pumpkin spice smoothie are the same drink, the blend is just named differently depending where you shop.

How to get a thick, spiced pumpkin smoothie every time

The one thing that matters is the order. Milk into the blender first, then everything else on top. Liquid at the bottom gives the blades something to grab, and without it they stall against the frozen pumpkin and the banana and you end up scraping the sides for two minutes. It is the difference between a smooth pumpkin smoothie recipe and a lumpy one, and it costs nothing. Most pumpkin smoothie recipes skip it, which is why people end up scraping the sides for two minutes.

The other thing is not to over blend. Forty five to sixty seconds on high is enough. Longer than that and the ice melts into it and you lose the thickness you were after.

I do not love the phrase, but if you are after a healthy pumpkin smoothie recipe, the honest version is this. Real pumpkin, enough protein to actually keep you full, and no syrup unless it needs it. That is the whole trick to a healthy pumpkin smoothie, and there is nothing clever about it.

  1. Add the almond milk to the blender first, then everything else on top. Liquid at the bottom stops the blades stalling on the frozen pumpkin and banana.
  2. Blend on high for 45 to 60 seconds, until completely smooth with no flecks of spice left sitting on top.
  3. Taste. Add the maple syrup if it needs it, or a splash more milk if you want it thinner.
  4. Pour into a tall glass and dust with a little extra pumpkin spice.

Note

  • Nutrition is for the smoothie as written, with a 35g scoop of vanilla whey and unsweetened almond milk. Semi skimmed dairy milk takes it to about 331 calories and 36g of protein.
  • Most vanilla protein powders are already sweetened, mine has 3.9g of sugars in a scoop, so taste before you reach for the maple syrup. Only add it if the smoothie needs it.
  • Freeze the pumpkin puree in an ice cube tray as soon as you open the tin. Frozen cubes are what make this thick rather than cold and thin, and they stop half a tin going to waste.
  • Protein is 44% of the calories here, which is unusually high for a smoothie and well past the 20% a high protein claim needs.
  • Fibre is 7g, just under the bar I use for calling something high fibre, so I have given you the number instead of the label.
  • Not gluten free as written, only because protein powders vary. Check yours.

Can I make this pumpkin smoothie without banana?

Yes, and it is the version I get asked for most. For a pumpkin smoothie no banana, swap the frozen banana for 100g of frozen cauliflower or half a frozen courgette, which sounds odd and tastes of nothing, or for 60g of frozen mango if you still want sweetness. Cauliflower drops it to about 230 calories and 30g of protein, and you will want the maple syrup.

Can I make a vegan pumpkin smoothie?

Yes. Use a vegan protein powder, a plant milk, and swap the Greek yoghurt for a thick coconut or soya yoghurt. A vegan pumpkin smoothie loses a little protein depending on the powder, usually 2g to 4g, and the texture stays the same. Check your powder, since some vegan blends are grittier and need the full 60 seconds.

Can I use pumpkin pie filling instead of puree?

No, and it is worth being fussy about. Pie filling is already sweetened and spiced, so a pumpkin puree smoothie made with it comes out sickly and you lose control of the sugar. The tin you want says 100% pumpkin and nothing else.

Which milk is best?

Unsweetened almond is what I use, for 284 calories. Semi skimmed dairy takes it to about 331 calories and adds 5g of protein. Oat lands around 324 and is the creamiest of the three. Any of them work, so use what is in the fridge.

Is this gluten free?

The recipe itself uses no gluten ingredients, but protein powders vary and mine does not carry a gluten free claim, so I am not labelling the recipe gluten free. Check your own powder and your pumpkin spice blend if you are coeliac.

Can I make it the night before?

You can, but it separates and loses the thickness. Better to freeze the pumpkin, the banana and the yoghurt in a bag as a smoothie pack, then tip the pack into the blender with the milk in the morning. That is 30 seconds of work and it tastes freshly made.

Do I need a high powered blender?

No, but the order matters more if yours is not powerful. Milk first, then the soft things, then the frozen pumpkin and banana on top, and give it a few seconds on low before you go to high. If it stalls, add a splash more milk rather than more blending.

How is this different from a pumpkin pie smoothie?

Not very, and that is the point. A pumpkin pie smoothie is usually pumpkin, spice, milk and something sweet, and this is that with the protein sorted out. The pumpkin protein smoothie version swaps most of the sugar for a scoop of powder, so you get the same flavour at 31g of protein instead of about 5g. If you have seen pumpkin protein smoothies at twice these calories, it is almost always the nut butter and the maple doing it.
