✅ Easy to make  âœ… Healthier

Lemon curd is one of my favourite spreads, I only tried it when I moved to the UK and since then I have loved baking with it. This version is slightly healthier and has some extra protein from yoghurt, super moist and delicious!

Here are the ingredients you will need:

  • 3 eggs
  • Zest of one lemon
  • 1 cup erythritol
  • 1/4 cup oil
  • 2 tbsp lemon juice
  • 3/4 cup skyr or fat free yoghurt
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1 1/2 cups of self raising flour
  • Lemon curd to top

Method:

  1. Rub together the erythritol and lemon zest
  2. Add the 3 eggs and whisk well
  3. Add lemon juice, olive oil and yoghurt and combine
  4. In a separate bowl combine flour, baking powder and salt
  5. Add 1/2 dry ingredients into the wet ingredients and whisk, add the remaining dry ingredients until no lumps remain
  6. Grease a loaf tin and add 1/4 mix layering with some lemon curd, repeat until you run out of mix
  7. Bake at 180c for around 40-50 minutes or until a toothpick comes out clean
  8. Take out and let cool, spread some lemon curd on top and enjoy!
