Cottage cheese pancakes are one of my favourite quick breakfasts. If you haven’t tried cottage cheese yet, ignore how it looks in the tub, because I promise these will convert you. The cheese melts into the batter, so the pancakes come out moist and fluffy, and they taste like apple pie for breakfast.

What goes into cottage cheese and oat pancakes

Cottage cheese is the base and most of the protein, which is what makes these high protein cottage cheese pancakes. I use low fat cottage cheese. Oat flour keeps them soft and filling, and it’s why I call them cottage cheese and oat pancakes. An egg holds everything together. Mixed spice gives the apple pie flavour, the same warmth as apple cinnamon pancakes. Baking powder helps them rise, and erythritol adds sweetness without the sugar.

An easy apple topping for pancakes

Chop half an apple, toss it with a teaspoon of maple syrup and a pinch of mixed spice, and microwave it for about a minute. It goes soft and syrupy, like apple pie filling, with no extra pan to wash.

A note from your nutrition coach

Leave the batter lumpy. Cottage cheese protein pancakes don’t need blending, and the little pockets of cheese are what keep them soft in the middle. Cook them over a medium heat so they set before they brown, and you’ll get fluffy cottage cheese pancakes every time. That’s the trick to protein pancakes with cottage cheese that never turn rubbery.

Frequently Asked Questions

Expand All:

Are cottage cheese pancakes healthy?

Yes. These cottage cheese pancakes are healthy, filling and high in protein, with 32g of protein and about 360 calories for the whole stack, apple topping included.

Can I make oatmeal cottage cheese pancakes with rolled oats?

Yes. Blitz rolled oats into a fine flour first, or the batter will be loose and grainy. Oatmeal cottage cheese pancakes made this way are just as good.

Do I need to blend the cottage cheese?

No. Just whisk everything together. The small curds melt as they cook and keep the middle soft. Blend it if you prefer a completely smooth pancake.

Are these cottage cheese gluten free pancakes?

They can be. Oats are naturally gluten free but often cross contaminated, so use certified gluten free oat flour and a gluten free baking powder.

Can I make banana cottage cheese pancakes?

Yes, mash half a banana into the batter in place of the sweetener and top with sliced banana instead of apple.

Can I make blueberry cottage cheese pancakes?

Yes, drop a few blueberries onto each pancake as soon as the batter goes into the pan, then flip as normal.

Can I meal prep these cottage cheese and oats pancakes?

Yes, cottage cheese pancakes with oatmeal keep well. Cook the pancakes, cool them and keep them in the fridge for up to 2 days. Warm them in a pan or the microwave and make the apple topping fresh.

Why are my pancakes falling apart?

The pan is usually too hot or they're flipped too soon. Cook over a medium heat and wait until the edges look set and the underside is golden before flipping.
