Mantecada is more of a cake but we enjoy it for breakfast with coffee, it is a delicious light sponge made with yellow maize flour and lots of butter, so delicious!

Here are the ingredients you will need:

  • 140g flour
  • 50g yellow maize flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • 30g erythritol (can sub for caster sugar)
  • 150g light butter
  • 3 eggs
  • 1/2 tsp vanilla extract
  • 50ml milk

Method

  1. Using an electric whisker, cream the butter and sugar together until it is very soft, add the eggs one by one while still whisking
  2. In a separate container, mix the flour, yellow maize flour, baking powder and salt
  3. Add 1/2 of the dry ingredients and mix until well incorporated, add the milk slowly and finally add the rest of the dry ingredients
  4. Add the mix to a greased tin and bake for 30-35 mins at 180c, before removing check the cake is fully cooked
  5. Let cool and enjoy!
