Cottage cheese pancakes are one of the best breakfast for a quick delicious start of the day. If you haven’t given cottage cheese a try and in spite of the appearance I promise you these will convert you into a lover.
The cheese makes these pancakes moist and fluffy, naturally high in protein, easy to make and so delicious.
Here are the ingredients you will need::
- 1 cup cottage cheese (around 150g)
- 1 egg
- 1/4 cup oat flour
- 1/2 tsp Baking powder
- 1 tsp mixed spice
- 2 tbsp sweetener
Topping:
- 1/2 apple chopped
- Maple syrup
- Mixed spice
Method:
- In a large bowl mix all the pancake ingredients, over a medium heat frying pan cook until golden brown
- Mix the apple, syrup and mixed spice and cook in a microwave for around 50-60 seconds
- Serve the pancakes, top with the apples and enjoy!
