High Protein
Easy to make
I love Filo pastries and honestly am a bit embarrassed to have only now started to bake with it. If you are used to puff pastry you might find this pastry a bit more delicate and slightly more complicated but it is 100% worth the effort.
For these tarts I wanted to combine sweet and savoury flavours keeping high protein, these make a delicious breakfast, dessert or snack! Just depends on your mood on the day.
Here are the ingredients you will need:
- 2 eggs
- 4 tbsp Greek yoghurt
- 2 tsp apricot jam
- Filo pastry
- Crumbled feta
Method:
- In a bowl whisk eggs, yoghurt and jam
- Cut the pasty sheet in 6cm squares, add to a muffin tray with olive oil between sheets
- Add the custard mix and top with crumbled feta
- Bake at 180c for 20-25 mins, let cool and enjoy!
