By now you know how much I love pastries and although I would usually go for a sweet one, sausage rolls have a special place in my heart. I tried my first sausage roll when I moved to the UK and I can honestly say I loved them from day one.
This version is made with vegetarian sausages and a spicy chimichurri sauce, these are perfect to share with friends, take on a picnic or just eat whenever!
Here are the ingredients you will need:
8 vegetarian sausages
2 tbsp chilli chimichurri
150g cheese
1 sheet puff pastry
Egg wash and sesame seeds to top
Method:
Blitz your sausages until they are broken down in small pieces
Add to a bowl and mix in chimichurri and cheese, using some cling film shape the mix into a long sausage tightly, leave in the fridge for around 30 minutes.
Add the sausage mix over a sheet of puff pastry fold over and pinch the long side of the pastry with a fork
Add your egg wash and cut into around 6 portions. Arrange them over a baking tray and sprinkle some sesame seeds
Bake at 180c for 25 minutes, let cool slightly and enjoy!
