If you’re looking for a quick, flavour-packed, high-protein breakfast that feels gourmet but takes just minutes to make, these Hot Honey Mozzarella Eggs will soon become a staple in your kitchen. This simple yet satisfying dish blends the rich savouriness of melted mozzarella with the sweet, spicy kick of hot honey—creating a balance of flavours that’s indulgent and comforting without being heavy.
The dish begins with hot honey caramelising slightly in a warm pan, creating a sticky, golden base. Grated mozzarella is then added, melting into the honey to form a gooey bed of cheesy goodness. Cracking eggs directly into this bubbling mix creates perfectly set whites and soft, runny yolks—though you can customise the firmness to your liking. Once the eggs are cooked, the dish is simply folded over like an omelette, trapping the molten cheese and sweet-spicy glaze within. The result? A stunning combination of textures and flavours that’s both rich and balanced.
What makes Hot Honey Mozzarella Eggs particularly brilliant is how quick and accessible it is. With just three ingredients, you can whip it up on even the busiest mornings—or use it as a satisfying high-protein snack any time of day. And while it’s minimal in effort, it looks and tastes impressive enough to serve guests or add flair to your weekend brunch.

How to make the hot honey
Hi, to make hoy honey you can simply mix honey with chilli flakes (red pepper).
I had been wanting to try this after seeing it on social media, so I gave it a shot this morning. The flavor was great – I loved the sweet, salty, savory, spicy combination. But my cheese/honey layer never really got a good golden crust like your photo, and when I fold it, it was all kind of mushed into a soft pile instead of folding into a nice omelet shape. Any suggestions? Did I not cook my cheese long enough before I added the eggs? I would definitely want to try it again!
Hi Kelly, thanks so glad you enjoyed it, it sounds like you didn’t leave it to cook for long enough, after you add the cheese wait for it to melt, once it is bubbling turn the heat down, add the eggs and wait patiently (I know it is hard!) it should crisp up and allow you to fold it as shown in the video without overcooking the eggs. Give it another try and see how it goes, always her if you need more suggestions 🙂
