Lemon curd is one of my favourite spreads, I only tried it when I moved to the UK and since then I have loved baking with it. This version is slightly healthier and has some extra protein from yoghurt, super moist and delicious!
Here are the ingredients you will need:
3 eggs
Zest of one lemon
1 cup erythritol
1/4 cup oil
2 tbsp lemon juice
3/4 cup skyr or fat free yoghurt
2 tsp baking powder
3/4 tsp salt
1 1/2 cups of self raising flour
Lemon curd to top
Method:
Rub together the erythritol and lemon zest
Add the 3 eggs and whisk well
Add lemon juice, olive oil and yoghurt and combine
In a separate bowl combine flour, baking powder and salt
Add 1/2 dry ingredients into the wet ingredients and whisk, add the remaining dry ingredients until no lumps remain
Grease a loaf tin and add 1/4 mix layering with some lemon curd, repeat until you run out of mix
Bake at 180c for around 40-50 minutes or until a toothpick comes out clean
Take out and let cool, spread some lemon curd on top and enjoy!
