The obsession for almond croissants over social media is big! I wanted to make this roll up version as a quicker and still delicious way to enjoy all the almond croissant flavours.

This recipe is super simple and required just a handful of ingredients, if you have some bread going stale this would be perfect. Hope you enjoy them!

Here are the ingredients you will need:

  • 3 bread slices
  • 3tbsp ground almonds
  • 2 tbsp light butter
  • 1 1/2 tbsp golden erythritol (or caster sugar)
  • 1/2 tbsp vanilla protein
  • Pinch of salt
  • Dash of milk if the mix is too dry
  • Flaked almonds to top

Method:

  1. In a bowl mix ground almonds, butter, sweetener, vanilla protein and salt if the mix is too dry you can add a dash of milk but the consistency should be firm enough to spread it
  2. Using a rolling pin flatten the bread slices, spread the almond mix on one side and roll tightly
  3. Spread some more mix on top and add the flaked almonds
  4. Air fry at 170c for 5 minutes and enjoy!
