✅ Easy to make
I had wanted to make these Japanese style pancakes for so long and when I saw the St Dalfour blueberry spread it just made sense to combine them, the result are these super fluffy pancakes with no added sugar, real fruit and so delicious!
Here are the ingredients you will need:
- 2 eggs
- 2 tbsp milk
- 1/4 tsp vanilla extract
- 1/4 cup self raising flour
- 2 tbsp erythritol
- St Dalfour blueberry spread
Method:
- Separate the egg yolks from whites, set the whites aside
- Add the milk and vanilla extract to the yolks, whisk until thick and frothy. Sift the flour into the bowl and mix well
- Add the erythritol to the whites and start beating with a hand whisker until they form soft peaks
- Add 1/3 of the egg whites and add into the yolks, mix by hand, add another 1/3 and keep mixing.
- Now transfer the yolk into the remaining whites mix, make sure you don’t deflate the air bubbles from the whites
- Over a medium heated skillet scoop 2 tbsp mix for each pancake, add some St Dalfour blueberry spread in the middle and cover with another 2 tbsp of pancake mix. Cover with a lid and flip once the bottom is golden brown.
- Serve with some yoghurt and more blueberry spread, enjoy!
