Easy to make
This is one of the most popular arepas in Colombia particularly in the Caribbean coast.
These are eaten as street food but also breakfast of lunch, any time is good for these really. Made with yellow maize and stuffed with an egg before being fried again. Buen provecho!
Here are the ingredients you will need:
- 1 cup maize flour
- 1 cup water
- 1 tsp salt
- 4 eggs
- Vegetable oil for frying
Method:
- In a bowl mix the flour, salt and water. Mix well until you have a soft dough
- Divide the mix into 4 portions (leave aside a little bit of dough for later) for a ball and using some cling film flatten the dough so it is around 1/2 cm thick
- Heat some oil in a deep pan, add the arepa carefully, cook until it is golden brown, remove from the oil and let cool slightly
- Cut a hole sideways, carefully not to break the sides. Crack an egg in a ramekin and then pour inside the arepa, seal with some more dough, return to the oil and cook for further 3-5 minutes
- Serve and enjoy!
