Easy to make
I am all about simple and delicious lunches and these parcels hit the brief perfectly.Tuna melt is one of my favourite filings.
Think about a cross between a pasty and an empanada, by simply using a tortilla wrap and toothpicks to secure the shape. These are cooked in an air fryer but you can also use an oven.
Here are the ingredients you will need:
- 1 tin tuna
- 1/2 tin sweetcorn
- 1 small tomato chopped
- Some grated cheese
- Mayo
- Salt to taste
- A tortilla wrap
Method:
- Mix the tuna, sweetcorn, tomato, mayo and cheese, season to taste
- Cut the tortilla in half and then fold the edges in to create a ‘cone’ secure the longer side with a toothpick, add half of the filling making sure you don’t over fill it
- Cose the top of the wrap and secure with another toothpick
- Drizzle some olive oil and add a few sesame seeds.
- Air fry at 170 c for 7-8 minutes or alternatively bake at 180c for around 10 minutes
