I shared some spiced apple pancake recipes and you loved them so much that I decided to make a more tropical version with pineapple, the pineapple is so juicy that it makes this pancakes moist and delicious, a perfect weekend breakfast
Here are the ingredients you will need:
1 cup almond milk
1 tsp apple cider vinegar (ACV)
1 cup flour self raising flour
1 scoop vanilla protein powder
1 tbsp coconut oil
Cinnamon
Sugar free salted caramel syrup
Pineapple rings
Method:
Mix the oat milk with ACV and set aside
In a large bowl sieve the four, protein powder and baking powder. Add the milk mix and coconut oil to it and mix well
Cut the pineapple in rings and then remove the middle
In a medium heat frying pan add some more coconut oil, syrup and cinnamon
Add the pineapple and cook gently, turn them and scoop the pancake mix over each pineapple ring
Once golden brown turn and cook the other side
Serve warm and top with some more syrup, pumpkin seeds and desiccated coconut. Enjoy!
