Mantecada is more of a cake but we enjoy it for breakfast with coffee, it is a delicious light sponge made with yellow maize flour and lots of butter, so delicious!
Here are the ingredients you will need:
140g flour
50g yellow maize flour
1/2 tsp baking powder
Pinch of salt
30g erythritol (can sub for caster sugar)
150g light butter
3 eggs
1/2 tsp vanilla extract
50ml milk
Method
Using an electric whisker, cream the butter and sugar together until it is very soft, add the eggs one by one while still whisking
In a separate container, mix the flour, yellow maize flour, baking powder and salt
Add 1/2 of the dry ingredients and mix until well incorporated, add the milk slowly and finally add the rest of the dry ingredients
Add the mix to a greased tin and bake for 30-35 mins at 180c, before removing check the cake is fully cooked
