These are high-protein oat and carrot muffins ready in about 30 minutes, 132 kcal and 9.2g protein each, made from oats, grated carrot, an egg and a scattering of walnuts, finished with a coconut cream drizzle if you like.
These carrot cake breakfast muffins are the one-bowl fix for wanting cake for breakfast without the sugar crash after. Oats and grated carrot do the heavy lifting on texture and natural sweetness, an egg holds everything together, and a scoop of vanilla protein powder turns what would otherwise be a fairly light snack into something that actually keeps you full until lunch. Bake a batch on a Sunday and they're breakfast sorted for most of the week.

Oats are the base of the batter and where most of the fibre comes from — use certified gluten-free oats if that matters to you, since regular oats are often cross-contaminated even though oats themselves don't contain gluten. Grated carrot adds moisture and natural sweetness without needing much added sugar. Egg binds the batter, one is enough for the whole batch. Vanilla protein powder is what pushes these from a light snack to genuinely high-protein; it's listed as optional but it's doing real work here, so I'd only skip it if you have a specific reason to. Walnuts give a bit of crunch against the soft crumb, swap for pecans or leave them out if you prefer.
Coaching note: if you're making these for someone avoiding gluten, the oats are the detail to get right — plain "oats" on a label doesn't guarantee gluten-free, since most oats are processed on the same lines as wheat. Buy oats specifically labelled gluten-free if that's a hard requirement, not just any bag from the baking aisle.

High-protein carrot cake muffins made with oats, carrot and an egg, finished with a coconut cream drizzle, ready in about 30 minutes.
Preheat your oven to 180°C (fan-assisted), or your air fryer to 160°C. In a mixing bowl, combine the oats, baking powder, protein powder and chopped walnuts.
Add the grated carrot, egg, almond milk and maple syrup to the bowl. Stir until everything is well combined.
Grease a muffin tray (or use silicone muffin cups) and divide the mixture evenly into 5 cups. A few extra walnut pieces pressed on top before baking look nice.
Oven: bake 20 minutes at 180°C fan, or until a toothpick inserted into the centre comes out clean. Air fryer: 12–15 minutes at 160°C in silicone cups that fit your basket, checking from 12 minutes with a toothpick.
