Biscoff Mini Crinkle Pies

Social media has introduced me to the wonders of crinkle pies. The most comment way to find them is the bigger format but I decided to make these muffin size for perfect little snack.

Made with filo pastry and custard these sweet pastries are a delicious treat to share with friends and family.

Here are the ingredients you will need:

  • 4 sheets filo pastry
  • 2 tbsp biscoff spread
  • Melted light butter

For the custard 

  • 1 egg
  • 2 tbsp skyr or Greek yoghurt
  • 1 tbsp melted biscoff
  • Around 1/4 cup milk

Method:

  1. Spread the biscoff on the long edge of the filo sheet, fold in around 2 cm and repeat until you have a long thin strip
  2. Arrange each strip in a muffing tray, brush some melted butter making sure to cover as much as you can. Bake at 180c for 10 mins
  3. Mix the custard ingredients and add to the pies, return to oven and cook for further 20 mins.
  4. Let cool slightly, top with some more biscoff spread and crumbs if you like and enjoy!
