Pan De Bono

✅ High Protein  ✅ Easy to make ✅ Gluten Free

This was one of my favourite breads when growing up, my favourite thing to do on the weekends was to go to our local bakery and pick up some freshly baked pan de bonos to enjoy for breakfast with my family.

I would say this version was pretty close to the one sold in bakeries back at home. Expect it to be crispy on the outside, chewy in the middle, very cheese and super tasty!

Here are the ingredients you will need:

  • 80g cassava (tapioca) flour
  • 30g maize flour
  • 1 tsp baking powder
  • 100g mozzarella
  • 100g feta cheese
  • 1 egg
  • Dash of milk if too dry.

Method:

  1. Mix the cheese and flours first, incorporate the beaten egg slowly keeping mixing
  2. Divide the dough into around 6 equal size portions
  3. Place on a baking tray and bake at 180c for around 15 to 20 minutes
