Easy to make
By now I trust you have realised I am a big tiramisu fan, I love the coffee creamy mix and have been trying to incorporate these into some other recipes.
These muffins are all you love about a tiramisu but on the healthier side, making them a delicious breakfast option which is also great for meal prep. I assure you you’ll be making these on repeat.
Here are the ingredients you will need:
- 2 eggs
- 1/2 cup Greek yoghurt
- 1/4 tsp vanilla essence
- 3 tbsp erythritol can sub for caster sugar
- 3/4 cup oat flour
- 1 tsp baking powder
For the cream cheese frosting
- 2 tbsp cream cheese
- 2 tbsp Greek yoghurt
- 1 1/2 tbsp powdered erythritol
A strong black coffee
Method:
- In a bowl mix all the muffin ingredients
- Add the mixture to a muffin tray to form around 6 muffins
- Cook in an air fryer at 180c for 15 minutes or a preheated oven for 25-30 minutes, or until a toothpick comes out clean.
- Poke the muffins with a toothpick and add 2 to 3 tbsp of strong black coffee to each muffin, this will make them super moist
- Top with frosting and enjoy!
