I shared some spiced apple pancake recipes and you loved them so much that I decided to make a more tropical version with pineapple, the pineapple is so juicy that it makes this pancakes moist and delicious, a perfect weekend breakfast
Here are the ingredients you will need:
- 1 cup almond milk
- 1 tsp apple cider vinegar (ACV)
- 1 cup flour self raising flour
- 1 scoop vanilla protein powder
- 1 tbsp coconut oil
- Cinnamon
- Sugar free salted caramel syrup
- Pineapple rings
Method:
- Mix the oat milk with ACV and set aside
- In a large bowl sieve the four, protein powder and baking powder. Add the milk mix and coconut oil to it and mix well
- Cut the pineapple in rings and then remove the middle
- In a medium heat frying pan add some more coconut oil, syrup and cinnamon
- Add the pineapple and cook gently, turn them and scoop the pancake mix over each pineapple ring
- Once golden brown turn and cook the other side
- Serve warm and top with some more syrup, pumpkin seeds and desiccated coconut. Enjoy!
