Red Pepper & Cheese Focaccia Muffins

It has been way too long since I last made some bread so I wanted to create something which was a bit different but had all the flavours that I love.

Focaccia has been one of my favourite things to make as it is super easy and tasty! This mini version is perfect for sharing, the recipe is no knead, no overnight proofing, ready in under 2 hours.

Here are the ingredients you will need:

  • 250g flour
  • 3g dry yeast
  • 1 tsp salt
  • 230 ml lukewarm water
  • 2tbsp olive oil

Toppings:

– Red Piquante peppers
– Mozzarella cheese

Method:

  1. Mix the flour, yeast and salt
  2. Add the water and olive oil, mix with a spatula, cover and rest for 30minutes
  3. After 30 minutes fold the dough inwards around 8 times, wetting your fingers so the dough does not stick
  4. Cover and rest for 30 minutes
  5. Grease a muffin tin and divide the dough into 6-8 portions, add the dough to the tin, cover and rest for 45 minutes
  6. Preheat your oven to 220c
  7. After resting, wet your fingers and gently dinple the dough
  8. Add the peppers and bake for 15- 20 minutes
  9. Remove from oven, add the cheese and bake for around 10 more minutes
  10. Let cool and enjoy!
