This blueberry baked yogurt soufflé is a creamy, high protein Greek yogurt bake that cooks in the air fryer in 15 minutes. Each dish has around 27g protein, 11g fibre and 286 calories, and it works as a baked yogurt breakfast or a healthy Greek yogurt dessert.
It is no secret that I love a sweet breakfast, and there was a time (before my egg era) when I would always have sweet breakfasts. This is a tweaked version of the Greek Yogurt and Blueberry Soufflé from the Yazio Pro recipe library, which is creamy, soft and so tasty. It is also high protein and lower in sugar, and you can meal prep it in pots so they are ready for you every morning.
What you get with this baked Greek yogurt:

Fat free Greek yogurt is the base and most of the protein, around 17g per dish, which is why this counts as a Greek yogurt high protein recipe. Full fat works too, it just adds calories.
Egg is what sets the mixture so it bakes into a soft, sliceable custard rather than warm yogurt. One medium egg per dish is all you need.
Instant custard powder replaces the pudding mix in the original, which I could not find anywhere in the UK. I use a no added sugar, supermarket own brand one, the kind you would normally just add water to.
Chicory syrup sweetens it gently and brings almost all of the fibre, about 10g per tablespoon. Honey or maple syrup work if that is what you have, but the fibre drops right down.
Blueberries burst as they bake and colour the custard in little purple pools. Fresh or frozen both work, frozen just need an extra minute or two.

So is it really a yogurt soufflé? Not in the classic French sense, there is no whipping of egg whites. It puffs up in the heat, then settles into something closer to a baked yogurt cheesecake as it cools, which is exactly why I love it.

Each dish works out at around 286 calories, 26.9g protein, 23.3g carbs, 6.9g fat and 11.5g fibre. Most of the 16.5g sugar comes naturally from the milk, yogurt and blueberries. That puts it firmly in high protein low calorie desserts territory, and it is a lot more filling than a pot of yogurt on its own. These are estimates based on the products I used, so your numbers will shift a little with different brands.
My best tip is the one I almost did not include because it is not in the timings: once they are cooked, leave them to chill in the fridge for about an hour. Warm, this is a soft yogurt bake. Chilled, it firms up into something that eats like a slice of baked cheesecake, which is a much easier way to get 27g protein into your morning than forcing down a shake. Pairing protein with fibre like this can help you feel full for longer, so it is a breakfast that actually lasts until lunch.

Crack an egg into each 15 x 10.5cm ovenproof glass dish, add the milk and whisk with a fork until fully combined.
Add the Greek yogurt and chicory syrup to each dish and whisk until smooth.
Sprinkle the custard powder over the top a little at a time, whisking as you go, until there are no lumps. Taste and add a little more chicory syrup if needed.
Add the blueberries, either stirred in or dropped over the top, keeping a few back to serve.
Put both dishes in the air fryer, no need to preheat, and air fry at 160C for 15 minutes. The edges should be set and the centres should have a slight wobble.
Leave them in the switched off air fryer for a few minutes, then take them out. They will sink a little and firm up as they cool, which is normal.
