As a certified nutrition coach who still likes to feel like she's holding something a bit glamorous at 6pm, this is the drink I reach for constantly through summer. It's basically just juice and soda, but the ratio is what makes it taste like a proper spritz rather than a glass of squash.

The magic here is grapefruit juice. Aperol gets its signature bitter-orange edge from gentian root and rhubarb, which obviously isn't something most of us have lying around, but grapefruit juice gets you surprisingly close. Mixed with sweeter orange juice, you get that same push-pull of sweet and bitter that makes a real spritz so moreish.
The berry soda does two jobs: it adds the fizz that makes this feel like an occasion drink rather than just juice, and it softens the bitterness just enough that it stays easy to drink. And because it's carbonated and fruity rather than neutral, it also nudges the colour toward that gorgeous Aperol orange-pink rather than a flat orange juice colour.

Step 1: Combine the juices Pour the orange juice and grapefruit juice into a large wine glass or highball glass.
Step 2: Top with berry soda Pour gently over the back of a spoon to keep the fizz. Start with 150ml and add more if you want it lighter and less concentrated.
💡 Coach note: Chill your glass in the freezer for a few minutes first — it keeps the drink colder for longer without watering it down with extra ice.
Step 3: Add ice and garnish Add a generous handful of ice, stir gently, and finish with an orange slice on the rim or floating on top.
Step 4: Serve immediately This one's all about the fizz, so drink it while it's fresh — no need to let it sit.
