Raspberry & Mascarpone Pastries

Nothing gets me out of bed easier than a freshly baked pastry for breakfast. I love the flakiness and when combined with mascarpone cheese and fruit it is something magical

Here are the ingredients you will need:

  • Ready rolled puff pastry
  • Mascarpone cheese
  • Raspberries

Method:

  1. Cut your puff pastry into approximately 10cm squares, using a small knife make some cuts from the corners to the middle
  2. Food each corner to the middle pressing so it stays, add some mascarpone cheese in the middle and top with a raspberry
  3. I glazed the pastries with a simple syrup and milk mix but you could also use egg wash
  4. Bake at 180c for around 15 minutes or until golden brown. Enjoy!
