Mango French Toast

This delicious French toast has the most delicious tropical flavours from mango and coconut in an easy breakfast form! If you love tropical fruits you’re going to love this high protein healthier breakfast which is super quick to make and will set you off to a great day.

Here are the ingredients you need:

  • 3 slices of bread
  • 1 egg
  • 100ml milk
  • 1 tbsp sugar free syrup
  • 1/4 tsp vanilla extract

For topping:

  • 2 tbsp light cream cheese
  • 2 tbsp skyr or Greek yoghurt
  • 1/2 mango chopped
  • 1 tbsp powdered erythritol (can sub for any other sweetener)
  • Desiccated coconut

Method:

  1. Whisk the egg, milk, vanilla and syrup. Dip each bread slice in the mix making sure is fully coated
  2. Over a pre heated skillet cook both sides of the bread until golden brown
  3. Using a mixer or blender, blitz the topping ingredients except the coconut
  4. Serve the bread and layer with the topping, sprinkle some desiccated coconut on top and enjoy!
