Easy to make
This is a very simple yet effective way to make homemade cottage cheese, social media has gone crazy for this cheese and it is easy to see why as it is super versatile, low in fat and high in protein!
There are lots of methods for making this, but they all involve heating the milk, adding lime juice, or other form of acid, and then letting the mixture thicken. For this version I didn’t use cream at the end as I prefer a lighter texture.
Here are the ingredients you will need:
- 2 pints milk
- 2 tbsp vinegar
Method:
- Heat milk to 183 degrees, add vinegar stir and let rest for 30 mins, curds should start forming
- Put a cloth over a sieve and pour the milk curds over to drain the water
- Close the cloth and run the cheese under the tap to wash away any acidity from the vinegar, squeeze excess water
- Add the cheese to a container and store for 3-5 days
