Healthier
Lemon curd is one of my favourite spreads, I only tried it when I moved to the UK and since then I have loved baking with it. This version is slightly healthier and has some extra protein from yoghurt, super moist and delicious!
Here are the ingredients you will need:
- 3 eggs
- Zest of one lemon
- 1 cup erythritol
- 1/4 cup oil
- 2 tbsp lemon juice
- 3/4 cup skyr or fat free yoghurt
- 2 tsp baking powder
- 3/4 tsp salt
- 1 1/2 cups of self raising flour
- Lemon curd to top
Method:
- Rub together the erythritol and lemon zest
- Add the 3 eggs and whisk well
- Add lemon juice, olive oil and yoghurt and combine
- In a separate bowl combine flour, baking powder and salt
- Add 1/2 dry ingredients into the wet ingredients and whisk, add the remaining dry ingredients until no lumps remain
- Grease a loaf tin and add 1/4 mix layering with some lemon curd, repeat until you run out of mix
- Bake at 180c for around 40-50 minutes or until a toothpick comes out clean
- Take out and let cool, spread some lemon curd on top and enjoy!
