Feta And Apricot Pastries

I love Filo pastries and honestly am a bit embarrassed to have only now started to bake with it. If you are used to puff pastry you might find this pastry a bit more delicate and slightly more complicated but it is 100% worth the effort.

For these tarts I wanted to combine sweet and savoury flavours keeping high protein, these make a delicious breakfast, dessert or snack! Just depends on your mood on the day.

Here are the ingredients you will need:

  • 2 eggs
  • 4 tbsp Greek yoghurt
  • 2 tsp apricot jam
  • Filo pastry
  • Crumbled feta

Method:

  1. In a bowl whisk eggs, yoghurt and jam
  2. Cut the pasty sheet in 6cm squares, add to a muffin tray with olive oil between sheets
  3. Add the custard mix and top with crumbled feta
  4. Bake at 180c for 20-25 mins, let cool and enjoy!
