Cookie Dough Stuffed Pancakes

Cookie dough has been making an appearance in a lot of recipes recently so I thought to combine it with my high protein healthier pancakes.

These were absolutely delicious and will make your day start the right way. The cookie dough filling is a simple vegan mix which is my go to, the chocolate chips are optional but definitely make this even more delicious.

Here are the ingredients you will need::

For the pancakes:

  • 1 cup almond milk
  • 1 tsp apple cider vinegar (ACV)
  • 1 cup flour self  raising flour
  • 1 scoop vanilla protein powder
  • 1 tbsp coconut oil

For the cookie dough:

  • 1/4 cup oat flour (blended oatmeal)
  • 2 tbsp peanut butter
  • 2-3 tbsp maple syrup
  • Dark chocolate chips

Method:

  1. Mix the oat milk with ACV and set aside
  2. In a large bowl sieve the four, protein powder and baking powder. Add the milk mix and coconut oil to it and mix well
  3. Mix all the cookie dough ingredients, if the mix is too wet add some more oat flour, form around 6 small cookies
  4. In a medium heat non stick frying pan add 2 tbsp of the pancake mix, add the cookie dough and top with more pancake mix
  5. Once golden brown turn and cook the other side
  6. Serve warm and top with some more syrup and chocolate chips, enjoy!
