Chocolate Shell Kiwi Chia Pudding

Chia puddings are a great way to include more fibre to your diet and keep your gut healthy, this version is sugar free but very delicious.

Here are the ingredients you will need:

  • 1 kiwi
  • 200ml plant milk
  • 1 tbsp erythritol
  • 1/4 cup chia seeds

For the shell

  •  15g sugar free dark chocolate
  •  1 tsp coconut oil
  •  3 drops chocolate stevia liquid

Method:

  1. To a blender add kiwi, plant milk and erythritol
  2. Add the liquid to an air tight container followed by the chia seeds, leave on the fridge for at least an hour
  3. Melted the chocolate with coconut oil and stevia
  4. Serve the chia pudding and top with the melted chocolate. Enjoy!
