Blackberry & cottage cheese bites

I love quick snacks and after my raspberry chia bites went viral I wanted to try a different version incorporating the St Dalfour blackberry spread, this is the perfect seasonal snack which you will have on repeat!

Here are the ingredients you will need:

  • 1/2 cup blackberries
  • 2 tbsp blackberry spread from St Dalfour
  • 1 cup cottage cheese
  • 1 tsp chia seeds
  • 50g dark chocolate (at least 70% cocoa)
  • 1 tsp coconut oil

Method:

  1.  Mash the blackberries, add chia seeds, cottage cheese, fruit spread and mix
  2.  Spread the mix over a non stick surface and make into around 6 circles, freeze for around 30 minutes
  3. Melt the chocolate and coconut oil, dip the blackberry clusters into the chocolate and they are ready!
