These are one of the most popular breads in the central region around Bogota and Boyaca, these cheese breads are similar to pan de bonos or pan de queso, so delicious with your morning coffee or hot chocolate.
Almojabanas are super easy to make and require basic ingredients like maize flour (same as arepa flour), cheese and eggs. The traditional cheese used would be cuajada but as this is not easily found abroad, I used mozzarella or if you can find some ‘queso fresco’ that’s another great option.
Here are the ingredients you will need:
- 1 egg
- 250g mozzarella
- 90g maize flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/4 cup milk
Method:
- In a large bowl, mix the cheese, baking powder and flour first then add the egg and milk, knead with your hands until well incorporated and smooth
- Divide the dough into approximately 6 portions of 80g and shape into balls. Place on a greased or lined baking tray and proceed to bake at 180c for around 25-30 minutes or until golden brown
- Let then cool slightly and serve warm
