Brussels Sprouts Waffle

Brussel sprouts are one of my favourite things about Christmas dinner but luckily we don’t have to wait until then to have them. For this recipe you will need a waffle maker and an open mind.

These little vegetables are very low in calories, high in fiber, and help with reaching your daily value of many vitamins, and minerals. They’re high in vitamin C,  rich in vitamin K.

Here are the ingredients you will need:

  • Around 200g Brussels sprouts
  • A handful of grated mozzarella cheese.

Method:

  1. Cook your Brussels sprouts until soft, dry then and add to a bowl.
  2. Using a potato masher crush then until mushy, mix in some cheese and seasoning. 3. Add the mix to your pre heated waffle maker and cook until crispy. Enjoy!
