Method
1. Shred the chicken
Cook and shred the chicken using two forks or a hand mixer for quick results.

2. Prepare the filling
In a bowl, mash the avocado with lime juice. Add the shredded chicken, Greek yogurt, tomatoes, spring onion, and seasoning. Mix until evenly coated.
Coach tip: Greek yogurt provides the creaminess you’d get from ranch or mayo, but with more protein and less fat.
3. Assemble the burritos
Spoon the mixture evenly onto the tortillas. Sprinkle cheese over each, then roll tightly, folding in the sides first.
Coach tip: For a variation, add a few strips of cooked bacon and a drizzle of ranch dressing for a chicken bacon ranch burrito twist.
4. Toast or air fry
Heat a non-stick skillet over medium heat and toast each burrito seam-side down for 2–3 minutes per side until golden and crisp.
