  • Macaroni: 150g (1½ cups)

Seasonings:

  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • ½ tsp chilli powder
  • ¼ tsp turmeric
  • Salt and pepper to taste

How to make Veggie Mac & Cheese:

Step 1: Prep Your Vegetables

Chop the carrot, red pepper, onion, courgette, and broccoli into small pieces. Add them to your slow cooker along with the garlic powder, mixed herbs, chilli powder, turmeric, salt, pepper, and water.

Step 2: Cook the Vegetables

Cover the slow cooker and cook on high for 1 hour or low for 2–3 hours, until the vegetables are soft and tender.

Step 3: Make the Sauce

Once the vegetables are soft, add the cottage cheese and blend everything in the slow cooker until it forms a smooth, creamy sauce.

Step 4: Add the Pasta

Stir in the dry macaroni, ensuring it’s well coated in the sauce. Cover again and cook on high for about 1 hour, stirring occasionally to make sure the liquid doesn’t dry out. If it starts to look dry, add a splash of water.

Step 5: Add the Cheese

Once the pasta is cooked, stir in half of the grated cheddar cheese. Use the remaining cheese to top the dish. For a crispy, golden finish, use a blowtorch or place under the grill until the cheese melts and turns golden brown.

Step 6: Serve and Enjoy
