Why You’ll Love This Recipe

  • High Protein: Packed with protein from eggs, ham, and cheese, it’s a great choice for anyone looking to boost their intake.
  • Easy to Make: With just a few simple steps, this dish comes together quickly in a single pan.
  • Versatile: Feel free to swap in your favourite vegetables or add extra ingredients like spinach or mushrooms.

Ingredients You’ll Need

  • 4 eggs
  • 130 g filo pastry
  • 120 g courgette, finely chopped
  • 60 g red pepper, finely chopped
  • 60 g ham, cut into pieces
  • 15 g spring onions, thinly chopped
  • 100 g reduced-fat cheddar cheese
  • Salt and black pepper, to taste

Method

  1. Whisk the Eggs

Start by cracking the eggs into a bowl. Add a pinch of salt and pepper, then whisk until well combined. This will be the base of your pie, so make sure the eggs are nicely beaten.

  1. Prepare the Filo Pastry

Using kitchen scissors, cut the filo pastry into long, thin strips. It’s a good idea to separate the strips as you cut to prevent them from sticking together. This adds a lovely flaky texture to the pie.

  1. Combine the Ingredients

To the whisked eggs, add the filo pastry strips, chopped red pepper, courgette, ham, spring onions, and cheddar cheese. Mix everything well, ensuring the filo is evenly coated with the egg mixture.

  1. Cook the Pie

Heat a non-stick frying pan over medium heat. Pour in the egg mixture, spreading it evenly across the pan. Cover with a lid and cook for 10-15 minutes, or until the bottom is golden brown and the top is set.

  1. Flip and Finish Cooking

Carefully use a plate to help flip the pie over, then slide it back into the pan. Cook the other side until it’s golden brown and crispy, about 3-5 more minutes.

  1. Slice and Serve

Once cooked, remove from the pan and let it cool slightly. Slice into wedges and serve hot. Enjoy this delicious, protein-packed meal on its own or with a side salad!

Tips and Variations

  • Make It Vegetarian: Skip the ham and add extra veggies like spinach, mushrooms, or cherry tomatoes.
  • Cheese Options: Try using feta, mozzarella, or even a bit of blue cheese for a different flavour profile.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Simply reheat in a frying pan or microwave.
  • Serving Suggestions

This egg filo pie is great on its own, but you can also serve it with:

  • A fresh green salad
  • A dollop of Greek yoghurt or cottage cheese
  • A side of roasted cherry tomatoes
