Easy to make
There is something about lemon curd which I absolutely love, it might be the buttery texture or perhaps the sweet and tangy flavours. I don’t really know but what I do know is that it works perfectly in these flakey creamy pastries.
Here are the ingredients you will need:
- 1 sheet ready rolled puff pastry
For the filling:
- 4 tbsp Greek yogurt
- 1 tbsp icing erythritol (or regular icing sugar)
- 1/2 tbsp lemon curd
For the glaze:
- 1 tsp lemon curd
- Some water
Method:
- Using a cookie cutter, cut 4 circles of approximately 8cm, cute a small circle into 2 so they form a sort of ring
- Place the ring shape on top of the circle, using a brush spread the glaze and with a fork pinch some holes on the bottom of the pastry
- Bake at 200c for 15 minutes
- Meanwhile mix the filling ingredients, the the pastries are cooked let cool fully
- Push the middle down and add your filling l, sprinkle some icing sugar and enjoy!
