Tiramisu Breakfast Muffins

By now I trust you have realised I am a big tiramisu fan, I love the coffee creamy mix and have been trying to incorporate these into some other recipes.

These muffins are all you love about a tiramisu but on the healthier side, making them a delicious breakfast option which is also great for meal prep. I assure you you’ll be making these on repeat.

Here are the ingredients you will need:

  • 2 eggs
  • 1/2 cup Greek yoghurt
  • 1/4 tsp vanilla essence
  • 3 tbsp erythritol can sub for caster sugar
  • 3/4 cup oat flour
  • 1 tsp baking powder

For the cream cheese frosting 

  • 2 tbsp cream cheese
  • 2 tbsp Greek yoghurt
  • 1 1/2 tbsp powdered erythritol

A strong black coffee

Method:

  1. In a bowl mix all the muffin ingredients
  2. Add the mixture to a muffin tray to form around 6 muffins
  3. Cook in an air fryer at 180c for 15 minutes or a preheated oven for 25-30 minutes, or until a toothpick comes out clean.
  4. Poke the muffins with a toothpick and add 2 to 3 tbsp of strong black coffee to each muffin, this will make them super moist
  5. Top with frosting and enjoy!
