Mango & Passion Fruit Crepes

Growing up in Colombia meant eating the most delicious tropical fruits, when I saw this mango & passion fruit spread from St Dalfour I knew it could easily become my favourite.

These mango and passion fruit crepes are a delicious way to start your day. They look quite impressive but couldn’t be easier to make, so if you want to impress your family or friends make sure you make these to them!

Here are the ingredients you will need: (makes 2 crepes)

  • 1 egg
  • 3/4 cup milk
  • 1/2 cup flour
  • 2 tbsp mango & passion fruit fruit spread
  • Pinch of salt

Filing 

  • 6 tbsp skyr
  • 2 tbsp mango & passion fruit spread
  • Chopped mango

Method:

  1. Add all the ingredients to a blender until the batter is smooth
  2. Heat a skillet over medium heat, add some cooking spray or oil so the crepes don’t stick. Depending on the size of your skillet add 1/2 of the mix and spread so it is thin
  3. Once the bottom is starting to brown, flip and cook the other side
  4. Mix the filling ingredients (apart from chopped mango) until well incorporated, spread over the crepe making sure you don’t over fill it
  5. Add the chopped mango, fold the sides inwards and then roll, top them with some white chocolate if you like and enjoy!
