✅ Easy to make
Mantecada is more of a cake but we enjoy it for breakfast with coffee, it is a delicious light sponge made with yellow maize flour and lots of butter, so delicious!
Here are the ingredients you will need:
- 140g flour
- 50g yellow maize flour
- 1/2 tsp baking powder
- Pinch of salt
- 30g erythritol (can sub for caster sugar)
- 150g light butter
- 3 eggs
- 1/2 tsp vanilla extract
- 50ml milk
Method
- Using an electric whisker, cream the butter and sugar together until it is very soft, add the eggs one by one while still whisking
- In a separate container, mix the flour, yellow maize flour, baking powder and salt
- Add 1/2 of the dry ingredients and mix until well incorporated, add the milk slowly and finally add the rest of the dry ingredients
- Add the mix to a greased tin and bake for 30-35 mins at 180c, before removing check the cake is fully cooked
- Let cool and enjoy!
