Cheesy Plantain Waffle

Cheesy Plantain Waffle

Lunch, Single Serve
✅ Easy to make This was one of your requests for my waffle experiments, I am a big plantain lover and I wanted to test if it would cook just in the waffle maker (rather than pre boiling) and I am happy to say it was a success. If you have never tried plantain I would recommend you do and even though it looks similar to a banana it is not the same. Here are the ingredients you will need: 1 Very ripe plantain  50g mozzarella cheese Method: Mash the plantain until there are no big lumps Mix in the cheese and cook in a waffle maker for around 15-20 minutes Serve and enjoy! You can see this recipe on instagram:

Herby Cream Cheese and Tomato Pastries

Herby Cream Cheese and Tomato Pastries

Lunch, Other, To Share
✅ Easy to make There is something so special about buttery flakey puff pastry which makes me crave pastries all the time, I have been trying more savoury recipes and this is possibly one of my favourites so far. For the filling I used my Philadelphia style cream cheese recipe (search on top of this page) mixed with some herbs and salt and some fresh cherry tomatoes. I had a couple of these for lunch along with some salad and they were just perfect Here are the ingredients you will need: 1 sheet of really rolled puff pastry Philadelphia style cream cheese Cherry tomatoes but in half Egg wash Sesame seeds (optional) Method: Cut your pastry in squares of around 8cm Spread the cream cheese diagonally and top with halved…

Almojabanas

Almojabanas

Breakfast, Other, To Share
✅ High Protein  ✅ Gluten Free  ✅ Easy to make These are one of the most popular breads in the central region around Bogota and Boyaca, these cheese breads are similar to pan de bonos or pan de queso, so delicious with your morning coffee or hot chocolate. Almojabanas are super easy to make and require basic ingredients like maize flour (same as arepa flour), cheese and eggs. The traditional cheese used would be cuajada but as this is not easily found abroad, I used mozzarella or if you can find some ‘queso fresco’ that’s another great option. Here are the ingredients you will need: 1 egg 250g mozzarella 90g maize flour 1/2 tsp salt 1 tsp baking powder 1/4 cup milk Method: In a large bowl, mix the cheese, baking…

Philadelphia Style Cream Cheese

Philadelphia Style Cream Cheese

Other, Sauces and Spreads
✅ Easy to make I never knew that making home made soft cheese was so easy, it only required two ingredients, basic utensils and you would have the most delicious cheese which you can flavour as you like. I added some herbs and a bit of salt to mine as I had in mind a recipe for later on but you can also use this for cheesecakes, cake frosting, pretty much anything you would use cream cheese for. Here are the ingredients you will need: 500ml milk Juice of 1 lime Method: Heat up the milk but don’t let it boil, add the lime juice, mix and let stand Over a bowl use a sieve and cloth and pour the milk over it Leave so the liquid drains, if you…

Crispy Halloumi Waffle

Crispy Halloumi Waffle

Lunch, Single Serve
✅ High Protein  ✅ Easy to make If you are a cheese lover halloumi might be up on your list, I absolutely love the taste and texture of this cheese which makes it a meal on its own. I coated it in some panko bread crumbs to add some extra crispness, for toppings I went for sweet chilly and spring onion. Waffle makers are so versatile and making these little experiments it’s just so fun, they make most things crispier than a grill and there is something about the square pattern which I just love. Here are the ingredients you will need: 1 block of halloumi cheese (approx 250g) 1 egg beaten Some flour Panko bread crumbs Method: Cut the halloumi block into around 3 thinner slices Cost them first…

Roscones (Colombian sweet bread)

Roscones (Colombian sweet bread)

Breakfast, To Share
✅ Easy to make These sweet round breads are a favourite for those with a sweet tooth. I used Arequipe (dulce de leche) for the filling although many version use bocadillo (guava sweet). These are so popular and sold pretty much at every bakery in Colombia. The dough recipe is very simple and very similar to what you would use for any sweet bread roll, using yeast as the rising agent. I made some cuts with scissors to the roscones and some of the arequipe oozed out so my tip would be to make very small cuts or none at all! Here are the ingredients you will need: (makes 8): 350 g strong white bread flour (plus extra for dusting) 7 g dried active yeast 35 g erythritol (can sub…

Tuna Melt Avocado Parcels

Tuna Melt Avocado Parcels

Lunch, Single Serve
✅ Easy to make ✅ High Protein I am all about simple and delicious lunches and these parcels hit the brief perfectly. Tuna melt is one of my favourite fillings, adding avocado takes it to a whole new level. Think about a cross between a pasty and an empanada, by simply using a tortilla wrap and toothpicks to secure the shape. These are cooked in an air fryer but you can also use an oven. Here are the ingredients you will need: 1 tin tuna 2 heaped tbsp guacamole Some grated cheese Salt to taste A tortilla wrap Method: Mix the tuna, guacamole and cheese, season to taste Cut the tortilla in half and then fold the edges in to create a ‘cone’ secure the longer side with a toothpick,…

Strawberry Upside Down Pancake

Strawberry Upside Down Pancake

Breakfast, Single Serve
✅ Easy to make ✅ High Protein I love trying new ways to have pancakes and upside down versions are one of my favourite, since spring is almost here and it is strawberry season I decided to try it with them. The pancake batter is my usual egg white base one which gives pancakes that fluffy texture, it also makes them higher in protein. For cooking choose a non stick skillet or make sure to grease your frying pan well. Here are the ingredients you will need: 1/2 cup self raising flour 1 egg white 1 banana 1 scoop vanilla protein (optional) 1 tsp baking powder 100ml preferred milk A handful of strawberries Brown erythritol (can sub for brown sugar) Toppings: Greek yoghurt More strawberry Sugar free chocolate chips Sugar…

Cookie Dough Waffle

Cookie Dough Waffle

Dessert And Sweets
✅ Easy to make This is my favourite experiment so far, I love cookies and I knew this would be a great one to try. Cooking the cookie dough in the waffle maker gave it a caramelised flavour and made them crispier than when baking. I would suggest to cook it until it is only slightly crispy as it will still harden once it cools down. I serve mine with some ice cream and peanut butter a fantastic dessert to share! Here are the ingredients you will need: 150g cookie dough Ice cream to top Peanut butter to top Method: To a non stick pre heated waffle maker, add the cookie dough, cook for around 15 minutes or until just starting to crispen up Remove and let cool slightly, add…

Apple & Cinnamon Pastries

Apple & Cinnamon Pastries

Breakfast, Dessert And Sweets
✅ Easy to make  ✅ No added sugar Pastries are a delicious way to start your day, my favourite are puff pastry ones. For these Apple and cinnamon pastries I used red apple although you could use green too. The secret to add more flavour is to use a fruit spread, I used the apple and cinnamon from St Dalfour. The required skills to make these are basic, I used ready rolled puff pastry which is so convenient. These pastries have no added sugar, are super flaky, made in no time and delicious. Here are the ingredients you will need: Ready rolled puff pastry 1 Apple St Dalfour Apple and cinnamon fruit spread Method: Using a cookie cutter, cut circles of approximately 8cm wide, slice your apple and remove the…
